SEAFOOD SALAD 
1 lb. imitation crabmeat, cut into sm. pieces
1 c. finely sliced fresh mushrooms, no stems
1/2 c. finely sliced water chestnuts
1 sm. (2 oz.) can pimentos
1/2-3/4 can rinsed & drained Chinese bean sprouts
1/4 c. low fat mayonnaise
1/2 c. reduced calorie creamy Ranch dressing
1/2 c. frozen (raw) green peas
10 whites of 4 hard boiled eggs, sliced thin lengthwise

Toss all ingredients together. Salt lightly. Pepper not to slightly. Serve on a bed of crisp shredded lettuce with peeled tomato wedges.
