FROZEN CUCUMBER PICKLES 
2 qt. cucumber slices, 1/4 inch thick (if home grown, cucumbers need not to be peeled, but if cucumbers have been wax coated, peel)
1 med. or lg. onion, sliced thin (DO NOT USE A SWEET ONION)
1 bell pepper, cut into thin strips

Place in a large bowl and sprinkle 2 tablespoons salt. Sit for 2 hours.

DO NOT RINSE CUCUMBERS - add 1 1/2 cups sugar (less if desired) 1/2 cup of white vinegar.

Freeze in containers - serve while still very cold, will keep in refrigerator several days.
