FRESH PEACH PIE 
8-9 inch baked Pastry Crust
5 c. sliced fresh peaches
1 tbsp. lemon juice
3 tbsp. quick cooking tapioca
1/2 tsp. ground coriander or cinnamon
12 packets (12 grams) Equal Tabletop Sweetener

First, bake the crust and set it aside. Then proceed with 1 or these 2 methods.

Conventional Method: Place sliced peaches in a medium saucepan. Stir in lemon juice. Add tapioca and coriander, stir gently and allow to stand 10 minutes. Cook and stir over medium heat until mixture is bubbly and peaches are tender when pierced. Let cool 1 hour, add the Equal, and spoon into baked pastry crust.

Microwave Method: Place sliced peaches in a glass baking dish. Stir in lemon juice. Combine tapioca and coriander, stir gently into peach slices, and allow peaches to stand about 10 minutes. Microwave on high setting, uncovered, 13 minutes or until mixture is bubbly and peaches are tender when pierced; stir 5 or 6 times while cooking. Let cool about 1 hour; sweeten with Equal and spoon into baked pastry crust. Garnish with a dollop of whipped topping. Servings: 6.

Since microwave ovens vary in power, you may need to adjust your cooking time.
