CHICKEN SPANISH OLIVE SAUTE 
1/3 c. butter
1 frying chicken, cut up salt & pepper to taste
1 sm. onion, chopped
1 clove garlic, crushed
1/4 c. green peppers, chopped
1/4 c. chopped stuffed green olives
1/2 c. water or white wine

In large heavy skillet melt butter. Add pieces of chicken that have been sprinkled with salt and pepper. Brown chicken slowly and carefully over low heat.

In small bowl mix the chopped onion, garlic, peppers and olives. Scatter over chicken pieces in skillet. Pour on the wine or water cover tightly and simmer gently over low heat until chicken is tender (browning chicken takes about 15-20 minutes). Simmering time with all ingredients about 45 minutes. Serve with pan juices.
