2 1/2 c. flour 2/3 c. sugar 1 tsp. baking powder 1 stick butter 1 egg Whipped cream Fresh fruit, enough sliced to fill 1 neatly arranged layer in the pan Pan - preferably spring form, 11 1/2 to 12 inch diameter. if no spring form pan is available, use a cake pan of 11 1/2 or 12 inches lined with waxed paper, greased on both sides for easy removal to serving plate. Or use 2 smaller pans. Mix flour, sugar and baking powder (sift if you wish, but it is not necessary). Cut in butter with pastry blender (or fingers). Mix in the egg. Knead. Roll on floured surface to fit the pan. Arrange the sliced fruit from outside edge in neat rows, finishing at the center. Sprinkle with sugar and cinnamon to taste. (Remember, the sweetness is in the dough.) Bake at 350 degrees for 1/2 hour or until dough is lightly browned and fruit is tender. Cool and place on serving plate. Garnish with plenty of whipped cream. |
