SWEDISH MEATBALLS 
2 lb. ground beef
6 oz. cream cheese
1/4 c. dry onion soup mix (1pkg. Lipton soup mix)
1/2 tsp. salt
1/2 tsp. nutmeg
2 c. soft bread crumbs
1/2 c. milk

Gravy:

2 tbsp. all-purpose flour
butter
milk

Meatballs: In large mixing bowl add all ingredients and mix with hands. Make 1 1/2 inch balls and brown in pan with a small amount of warm olive oil. After browning meatballs use same pan to make gravy.

Gravy: In same pan used to brown meatballs stir in flour on low flame. Melt butter, then pour in milk a little bit at a time, continually stirring. After all the milk is added mixture will thicken. Heat on low heat for 10-15 minutes, stirring every few minutes. Add meatballs back to pan. Can be served in crockpot or over sterno with toothpicks or a spoon.

Serves 50-100 people.
