CHOCOLATE WAFFLES 
1/2 c. unsalted butter (melted)
3/4 c. sugar
2 egg yolks, well beaten
1/2 tsp. vanilla extract
3 oz. bittersweet chocolate, melted
1 1/2 c. flour
2 tsp. baking powder
1/4 tsp. salt
2 tsp. powdered instant Espresso coffee
1/2 c. milk
2 egg whites, stiffly beaten

Combine butter and sugar, add egg yolks, vanilla and chocolate. Beat until smooth. Sift together, flour, baking powder, and salt and powdered coffee. Add to mixture, alternately with milk. Beat egg whites until stiff, fold into batter. Bake in hot waffle iron. Serve with flavored, sweetened whipped cream.
