CHOCOLATE WAFFLES 
2 eggs
2 c. milk
2 c. flour
3/4 c. cocoa
3/4 c. sugar
3/4 c. oil
2 tsp. baking powder
1 tsp. baking soda

Separate eggs, placing yolks in large bowl and whites in a small one. With a wire whisk beat the egg yolks and milk until frothy. Add the flour (may use part whole wheat), cocoa, sugar, oil, soda and baking powder and mix until smooth. Beat egg whites until stiff and fold into batter. Bake on hot, lightly greased waffle iron. Makes 4 1/2 to 5-8 inch square waffles.
