POTATO PANCAKES 
4 potatoes
1 onion
4 eggs
1-1 1/2 c. bread crumbs

Grate onion and potatoes (large side of grater). Add eggs and bread crumbs. Fry in electric frying pan in approximately 3 tablespoons of oil. Make each potato pancake by using 1 rounded tablespoonful. Turn when each is brown. Serve with applesauce and it makes a change of pace from meat and potatoes.
