EGGPLANT DRESSING 
1 lb. ground steak
1 onion
1 bell pepper
3 stalks celery
2 c. cooked rice
1 lg. eggplant

Peel, boil and mash eggplant. Saute onion, celery, and pepper; remove from skillet. Saute ground steak. Combine eggplant, vegetables, meat and salt and pepper. Cook on low heat. Add rice. Stir well. Cook covered a few minutes. Freezes well.
