SPICE CAKES -- WITH ICING | |
3/4 c. sugar 3/4 c. honey 2 eggs 3 1/2 c. self-rising flour 1 tsp. cinnamon 1/8 tsp. allspice 1 c. chopped almonds 3/4 c. chopped orange peel Icing: 1 c. confectioners sugar 2 egg whites 1 tsp. lemon juice Preheat oven to 400°F. Mix sugar, honey and eggs thoroughly. Add flour to sugar mixture; mix in almonds and orange peel. On a lightly floured surface, roll out to 1/4-inch thickness. Cut in shapes that suit your fancy. Place on lightly greased baking sheet, leaving some space between cookies. Bake 10 to 12 minutes. While still warm, brush tops with icing. For Icing: Blend confectioners sugar, egg whites and 1 teaspoon lemon juice. Beat for several minutes. Brush on cookies. These are best if stored in a covered container for several days before eating. |
