WALDORF SALAD COOKIES 
2 3/4 c. all-purpose flour
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. ground cinnamon
1 1/2 c. firmly packed light brown sugar
3/4 c. real mayonnaise
2 lg. eggs
1 tsp. vanilla
1 1/2 c. coarsely chopped, unpeeled red apples
1 c. coarsely chopped walnuts
1/4 c. finely chopped celery

In a medium bowl, stir together flour, baking soda, salt and cinnamon. In the large bowl of an electric mixer at medium speed, beat together sugar, mayonnaise, eggs and vanilla until smooth. Add flour mixture and at low speed beat until smooth. Stir in the apples, nuts and celery.

Drop by level tablespoons, 2 inches apart, on ungreased cookie sheets. Bake in preheated 350 degree oven until lightly browned, 10 to 12 minutes. With wide spatula, remove to wire rack to cool completely. Store in a tightly covered container. Makes about 4 dozen.
