FRESH BROCCOLI WITH OIL AND
LEMON
 
1 lb. broccoli
2 tbsp. water
2 tsp. olive oiltsp. lemon juice
1/4 tsp. salt
1/8 tsp. pepper

A microwave recipe: Wash broccoli and discard tough portions of stalk. Split stalks lengthwise to uniform size for more even cooking. For a more tender broccoli, peel stalks with a paring knife before cooking. Arrange broccoli spears with stalks to outside of dish and flowerettes in center. Add water. Cover and cook on full power 6 to 7 minutes. Let stand, covered, three minutes. Just before serving, sprinkle olive oil, lemon juice, salt, and pepper over broccoli. Makes 4 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
