LEMON CHICKEN BROCCOLI 
1 tbsp. vegetable oil
1 c. milk (skim)
2 tbsp. cornstarch
2 tbsp. lemon juice
4 thin lemon slices
2 whole chicken breasts, split & boned
1/4 c. skim milk
1/8 tsp. pepper
1 (10 oz.) frozen broccoli

Combine 1 cup skim milk, cornstarch, pepper and cook until thick. Add cooked frozen broccoli. Set aside. In skillet, in hot oil, cook chicken 10 minutes or until browned on both sides. Spoon off fat.

Combine broccoli mixture and additional milk, stir in lemon juice. Pour over chicken; top each piece with thin slice of lemon. Cover; simmer 5 minutes or until chicken is fork tender, stirring occasionally.
