SWEET POTATO CASSEROLE 
4-5 med. size potatoes, baked or boiled
2 eggs, beaten
1 c. sugar
1/2 stick butter
1/2 c. milk
1/2 tsp. salt
1/2 tsp. ground cinnamon
Ground coconut &/or raisins (optional)

Mash potatoes slightly, then with mixer add the above, mix until a soft consistency. Pour into a greased baking dish.

CASSEROLE TOPPING:

1/2 c. flour (self-rising)
1 c. light brown sugar
1 c. chopped nuts (pecans)
1/2 stick butter (melted)

Mix lightly, this will be kinda lumpy, spread over top of dish and bake at 350 degrees for 30 minutes.
