SCALLOPED POTATOES 
25 lbs. potatoes, sliced
4 lbs. Velveeta cheese
2 sticks butter
2-3 onions, chopped in blender
1/2 - 2/3 c. flour
Cream
1 gal. milk
Salt
Pepper

Peel and slice potatoes. Melt butter. Put in flour, milk and cream. Bring to boil and add cheese. Stir until melted and pour over potatoes. Cover with foil and bake for 1 hour at 350 degrees.

We take the foil off the last 10 minutes of cooking time to brown the top. If it starts to boil over, poke holes in the foil or lift a corner. Serves 50.
