SWEET POTATO CASSEROLE 
1 lg. can sweet potatoes, mashed
1 tbsp. cornstarch
1 c. milk
2 eggs, beaten
3/4 stick butter
1 1/2 c. sugar (if sweet potatoes are unsweetened)

Dissolve cornstarch in a little cold milk. Mix all ingredients together and bake 15-20 minutes at 400 degrees.

TOPPING:

1 c. crushed cornflakes
3/4 c. butter
1/2 c. chopped nuts
1/2 c. brown sugar
1 c. coconut

Mix topping ingredients together over low heat, spread over sweet potatoes and bake 15-20 minutes at 350 degrees.
