MY NANA'S LACE COOKIES | |
2 1/4 cup oatmeal (I use old fashioned oats) 2 1/4 cup packed light brown sugar 3 tbsp all purpose flour 1 tsp salt 1 cup melted butter (I use unsalted) 1 large egg, slightly beaten 1 tsp. vanilla Preheat oven to 375°F. Only bake one cookie sheet at a time. Mix in a bowl, the Oatmeal, brown sugar, flour, and salt stir in the melted butter until well blended. Add the slightly beaten egg and vanilla. Mix until well blended. Drop by 1/2 teaspoonfuls, at least 2 inches apart, on a parchment lined cookie sheet. Bake until lightly browned, about 4-5 minutes. Be sure to keep an eye on them as they can burn quickly. Cool slightly on the cookie sheet, as soon as they are firm enough, remove on to cooling rack.
