PUMPKIN PUDDING CAKE 
29 oz. can pumpkin
1/2 tsp. salt
2 tsp. ginger
2 tsp. cinnamon
3 eggs
2 tbsp. molasses
1/2 c. sugar
14 oz. can sweetened condensed milk

Preheat oven to 350 degrees. Mix pumpkin, salt, ginger, cinnamon, eggs, molasses, sugar and condensed milk. Put into 9 x 13 inch pan.

TOPPING:

1/2 box white cake mix or 1 layer box
1 1/4 sticks butter
Whipped cream (optional)
1 c. chopped pecans

Crumble dry cake mix over pumpkin mixture then drizzle with melted butter and cover with chopped pecans. Bake for 1 hour. Top with whipped cream. Serves 15 to 20.
