SWEET PICKLED WATERMELON 
rind from average sized watermelon, cut into 1 inch pieces
1/2 t baking soda
water

Cook rind pieces in water with baking soda until tender. Drain off water. Put rind in boiling syrup mixture and simmer for 40 minutes.

While hot, pour into hot, sterilized jars and seal.

Makes 10 pints.

Syrup:

4 lbs. sugar
3 pints vinegar
1 t cloves
1 t cinnamon

Mix syrup ingredients together in large saucepan. Stir until dissolved; bring to a boil.
