RICE PANCAKES 
3 eggs, separated (discard 1 yolk)
1/2 c. sweet milk
1/4 c. sugar
1/2 tsp. salt
3/4 c. flour
2 tsp. baking powder
3 tbsp. melted butter
2 c. cooked rice

Sift together salt, flour, baking powder. In glass or metal bowl beat egg whites fluffy. In large bowl mix yolks, sugar and milk. Add fluffy rice. Add flour mixture and stir by hand. Stir in shortening. Last gently fold in fluffy egg whites. Fry in oiled non-stick pan in 2 1/2 inch rounds. Turn when golden brown. Fry on medium heat.
