POTATO PANCAKES 
2 lg. potatoes, peeled and grated
1 med. onion, peeled and grated
2 tbsp. flour
1/4 tsp. salt
Dash pepper
1/8 tsp ground nutmeg
1/2 tsp. parsley flakes
2 egg yolks, slightly beaten
2 egg whites, stiffly beaten
butter
Applesauce, optional

Put potatoes and onion in mixing bowl; add flour and seasonings, mixing well. Add egg yolks and mix well; fold in egg white. Melt a little butter in frying pan. When pan is hot, spoon in 2 tablespoons potato mixture for each pancake; fry over medium heat until golden brown on both sides. Serve alone or with applesauce. Serves 4 or 5.
