FISH
 
Fish fillets - firm, best
Minced fresh garlic
Monterey Jack cheese, sliced thin
Crumbs
Lemon wedges
Cooking oil

(Cornflake, Triscuit, bran cereal, wheat wafer, etc. - crushed loosely, not finely - bread crumbs, last resort). Wash fish, pat dry. Place in greased pan. Cover with slice of cheese. Sprinkle with garlic sauteed lightly in oil and mixed with crumbs. Bake at 350 degrees until fish flakes easily with fork. Serve with lemon wedges.
