PUMPKIN CREAM CHEESE ROLL | |
1 c. sugar 3 eggs 3/4 tsp. cinnamon 2/3 c. flour 1/2 tsp. baking soda 2/3 c. pumpkin 12 oz. cream cheese, room temperature 3 tbsp. butter, melted 1 c. powdered sugar 1 tsp. vanilla 1 c. chopped pecans Mix all dry ingredients, then beat eggs and add pumpkin to eggs. Stir all of this into dry mixture. Spray jelly roll pan with Pam. Bake 15 minutes at 350 degrees. After baking, turn immediately onto a tea towel sprinkled with 1/2 cup powdered sugar. Roll up like a jelly roll and let cool. When it is cool, unroll and spread the filling onto roll. FILLING: Mix cream cheese, melted butter, powdered sugar, vanilla and chopped pecans together. After spreading filling, reroll and wrap in foil. May freeze for future use. |
