GLORIFIED RICE 
1/2 c. rice
1 1/2 qt. hot water
1 qt. milk
1 tbsp. sugar
1/2-1 tsp. salt
1 tbsp. butter
3/4 c. sugar
3 env. Knox gelatin (softened in 1/2-3/4 c. cold water)
1 pt. whipping cream (whipped)
2 tsp. vanilla
Pineapple tidbits or crushed pineapple

Pour rice into hot water. Boil 2 minutes. Drain and rinse in cold water. Pour 2 cups milk into a 2-3 quart saucepan. Add 1 tablespoon sugar, salt and rice. Bring to a boil and add butter. Cover and simmer 15 minutes.

Pour into a large bowl. Add 2 cups cold milk, 3/4 cup sugar and softened gelatin. Chill until it begins to thicken. Fold in whipped cream, vanilla and pineapple. May also swirl in blueberry or cherry pie filling instead of pineapple.
