EASY APPLE KUCHEN
2 env. active dry yeast
1/4 c. warm water (110 degrees)
2 lg. eggs
1 pkg. Duncan Hines yellow cake mix
1 1/4 c. all purpose flour
1 1/2 c. sugar
1 tbsp. ground cinnamon
1/3 c. butter
6 med. apples, presliced

Dissolve yeast in warm water in large mixer bowl. Blend in eggs and half if dry cake mix. Beat for 1 minute at medium speed. Add remaining cake mix and beat for 3 minutes at medium speed. (Batter should be quite stiff but not dough like). Let rise 5 minutes. Sprinkle flour on board. Scrape batter out onto prepared board. Knead batter until flour is worked in, about 100 strokes. Place in greased bowl, cover and let rise in warm, draft free place for 30 minutes.

For topping, mix sugar and cinnamon in bowl; cut in batter with pastry blender. Preheat oven 350 degrees. Grease 13 x 9 x 2 and 8 x 8 x 2 pan. Pare, core, slice apples. Punch down dough with greased fingertips. Spread dough to 1/4 inch to 1/2 inch thickness on bottom of pans. Arrange apple slices in rows on top.

Sprinkle with toppings. Let rise in warm place for 30 minutes. Bake at 350 degrees for 25 to 30 minutes or until toothpick inserted in center comes out clean. Serve warm.
