1 standing rib roast (any number of ribs) Salt, pepper & garlic Plan to roast meat in the morning. Allow several hours to elapse between Step 1 and 2. Step 1: Allow roast to stand at room temperature at least 1 hour. Preheat oven to 375 degrees. Rub roast with seasonings, place on rack, rib side down on roasting pan, roast for 1 hour at 375 degrees. At the end of 1 hour, turn oven OFF. DO NOT OPEN OVEN DOOR! Step 2: Twenty minutes before serving time, turn oven on again to 375 degrees and cook this additional time. 20 minutes rare; 25 minutes medium; 30 minutes medium to well. DO NOT OPEN OVEN DOOR from the time you put roast in until you are ready to eat. |
