RAISIN GRANOLA MINI - BITES 
1 c. raisins
16 oz. can frozen apple juice concentrate
1/2 c. butter
1 egg
1 1/4 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. ground cinnamon
1/2 tsp. finely shredded orange peel
2 c. granola, slightly crushed

In a medium saucepan heat together raisins, apple juice concentrate and butter until melted. Remove from heat; cool. Beat in egg.

In a small mixing bowl combine flour, baking soda and cinnamon; stir into egg mixture. Stir in orange peel and granola. Let dough stand for 1-2 minutes or until granola absorbs some of the liquid.

Drop by rounded teaspoons 2 inches apart onto ungreased cookie sheets. Bake in a 350 degree oven about 10 minutes or until lightly browned on the bottom. Remove and cool on a wire rack. Makes about 5-6 dozen cookies.
