HOMEMADE MINCEMEAT | |
1 lb. lean, boneless stew meat 6 tbsp. beef suet 2 lbs. green cooking apples 1/2 lb. seedless raisins 1 tsp. salt 1 tsp. chopped, candied orange peel 1 tsp. chopped, candied lemon peel 2 c. brown sugar 1/2 tsp. grated nutmeg 1 1/2 tsp. ground cinnamon 1/2 tsp. ground cloves 1/2 tsp. ground ginger 2 c. apple cider Cut meat in very small pieces. Chop the apples in small pieces. Cut suet in small pieces. Combine ingredients in the order given and simmer very gently for two hours. Very low heat should be used. If you have an asbestos pad, put it under the kettle to prevent scorching. Keep in tightly covered jars in a cool place until needed. This mincemeat will keep six months. |
