THE BEST HOMEMADE MINCEMEAT | |
5 lb. apples, peeled, cored and cut up 1 1/2 lb. cooked beef, cut up 1/2 c. butter 5 c. beef broth 5 c. grape juice 1/2 c. orange juice 2 tbsp. lemon juice 2 (15 1/2 oz.) cans crushed pineapple 2 lb. raisins 2 1/2 c. brown sugar 1 tbsp. ground cinnamon 1 tsp. ground cloves Process apples in food processor or grind with coarse blade of food grinder. Grind beef with coarse blade of food grinder. In 10-12 quart kettle combine apples and beef with remaining ingredients and 1 teaspoon salt. Simmer, covered, 1 hour, stirring frequently. Pack hot mincemeat into clean, hot quart jars; leave 1 inch head space. Wipe rims. Adjust lids. Process in pressure canner at 10 pounds pressure for 20 minutes. Makes 7 quarts. |
