CORN FRITTERS 
1 lb. frozen corn (blend)
1 egg
1/2 tsp. salt
1/4 c. milk
1 c. flour
2 tsp. baking powder
2 tsp. melted butter
1/2 tsp. sugar

Mix egg, salt, milk, flour, baking powder, butter and sugar. Stir. Add corn, let sit 5 minutes. Drop by teaspoonfuls into hot oil, cook until puffy and golden brown. Drain. Serves 4 to 6.
