MEXICAN FRUIT CAKE 
2 c. sugar
2 c. flour
2 tsp. baking soda
1/2 tsp. salt
2 eggs
20 oz. crushed pineapple
1/2 c. coconut
1 c. chopped pecans

Do not use mixer. Stir by hand with spoon. Mix ingredients sugar, flour, soda, salt. Beat eggs slightly. Add eggs, pineapple and pineapple juice, coconut, pecans. Spray 9 x 13 inch pan with Pam, no flour needed. Bake at 350 degrees for 30 minutes.

ICING:

1/2 box powdered sugar
3 oz. cream cheese
1/4 c. softened butter
1 tsp. vanilla

Mix together. Spread on cake.
