Purchase 1/3 pound for each serving. 150 servings = 50 pounds. Soak in cool water 2 hours. Cut in servings, about 3 inches wide. Place close together in 2 inch pans. Cover with hot water. Bake 20 minutes in 350 degree oven. Sprinkle with salt. When fish flakes with fork, it is done. Serve with 2 whole tomatoes, vegetables, etc. Use: 1 tsp. mustard each Allspice in shakers CREAM SAUCE: 1/2 whole milk 1/2 fish water Use whole milk and fish water. Thicken with rue of oil and flour. Use about 1 gallon for 50. |
