VEGETABLE SPREAD (FOR
SANDWICHES)
 
1 c. cabbage
4 carrots
1/2 c. green pepper
1 c. celery
1 med. onion
1 lg. cucumber
3/4 c. mayonnaise
1/4 c. water
2 env. Knox gelatin
2 tbsp. sugar
2 1/2 tbsp. vinegar
2 tsp. salt
1/4 tsp. black pepper
1/2 tsp. paprika
1/2 tsp. Worcestershire sauce

Chop first 6 ingredients in blender to fine; use blender instructions. Drain well. Combine with 3/4 cup mayonnaise. Set aside.

In small saucepan, combine all remaining ingredients. Cook over low heat until dissolved. Pour over vegetables and stir. Refrigerate until set. Can be stored overnight; good for small party sandwiches.
