1 c. shortening
1 c. sugar
1 egg
1 c. pumpkin
1/2 tsp. salt
2 c. flour
1 tsp. baking powder
1 tsp. baking soda
1 tsp. pumpkin pie spice or cinnamon
1 tsp. vanilla

Cream shortening, sugar and egg. Add pumpkin. Sift together dry ingredients and add to creamed mixture. Drop by teaspoons onto greased baking sheet. Bake at 350 degrees for 10-12 minutes. Frost with butter cream icing if desired. These freeze well.
