RICE PAN CAKES 
(Yields: 10 to 12)

1/2 c. cooked rice
2 eggs
1/4 c. sugar
1/4 tsp. salt
1/2 c. flour
1 1/2 tsp. baking powder
Dash cinnamon or nutmeg

Beat eggs until fluffy. Add all other ingredients. Mix by hand. Drop by tablespoon onto hot grease. When both sides are browned (make sure center is done). Remove and place on paper toweling to dry. Sprinkle with confectioners sugar.
