DRESSING:

1 c. oil
3/4 c. brown sugar
1/3 c. ketchup
1/4 c. pineapple vinegar
2 tsp. soy sauce

Combine dressing ingredients in blender. Chill to blend flavors.

SALAD:

6 c. fresh spinach, torn
1 c. mushrooms, sliced
1 carrot, shredded
1/2 red onion, thinly sliced
1 c. jicama, julienne strips
1 c. celery, sliced
4 eggs, hard boiled and sliced
Whatever else you feel like adding

Combine all salad ingredients, except eggs. Pour dressing over; toss to coat. Garnish with egg and serve immediately. Serves 8.
