EASY YELLOW CAKE 
2 c. flour
1 c. sugar
1/2 c. shortening
2 eggs
1 c. water
2 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla

Cream shortening with sugar, add eggs. Add remaining ingredients and mix well. Grease pan and bake at 350 degrees for 45 minutes or until done.

Variations: lemon cake: add 1/2 teaspoon lemon extract.

No cholesterol white cake: Substitute 3 or 4 egg whites for the 2 eggs.

I filtered the flour in this recipe and the cake came out real well. At first I thought, that the mix was too watery and that it wasn't going to come out well. But I baked it for 45 minutes and it came out very good. On a final note I used hot water, instead of cold water. I've read somewhere that using hot water is a lot better. Another thing I think that using water instead of milk is better, because milk is too heavy and some times it prevents the cake to rise
