SHRIMP MONTEREY 
2 tbsp. butter
2 # med. shrimp, shelled and deveined
1/4 tsp. cayenne pepper
1/2 c. dry white wine
2 c. shredded Monterey Jack cheese
2 tsp. chopped parsley

In large skillet melt butter and garlic. Cook for 1 minute. Add shrimp and cayenne, cook for 4 minutes stirring often. Remove shrimp and place in 11 x 7 baking dish. Add wine to skillet and bring to a boil for 5 minutes. Stir until reduced by 1/2. Pour over shrimp. Combine cheese and parsley and spoon over shrimp. Bake at 350 degrees for 10 minutes until cheese is melted. Serves 6.
