GRILLED CHICKEN FRUIT SALAD 
1 chicken breast
2 c. red seedless grapes, halved
1/2 c. of celery, chopped
1/4 c. onion, chopped
1/2 c. mayonnaise
1 tbsp. of Dijon mustard
1/2 tsp. salt
1/2 tsp. pepper
1 tsp. lemon juice
2 tsp. walnuts, finely chopped

Lightly coat the grill with cooking spray and preheat for 5 minutes. Grill the chicken for 5-7 minutes. Cool and cut into small cubes. In a large salad bowl, combine the chicken, grapes, celery, onion, and walnuts. Mix together the mayonnaise, mustard, salt, pepper and lemon juice to make dressing. Pour over the chicken salad and toss lightly.
