1 1/2 c. oil
2 c. sugar
2 eggs
2 tsp. vanilla
3 c. diced apples (McIntosh)
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
3 c. flour
3/4 c. walnuts

Beat oil, sugar, and eggs. Mix above ingredients leaving apples to last. Batter is very thick. Add 1/2 of apples and beat and 1/2 of apples last by hand. Bake in 325 degree oven for 1 hour.
