OATMEAL CARROT COOKIES | |
3/4 c. butter 1 3/4 c. flour 3/4 c. packed brown sugar 1 egg 1/2 tsp. cinnamon 1/4 tsp. cloves 1 tsp. baking powder 1/4 tsp. baking soda 1 tsp. vanilla 2 c. rolled oats 1 c. finely shredded carrots 1/2 c. raisins 1/2 c. granulated sugar In a large mixing bowl beat at medium speed the butter until softened. Mix together the flour, brown sugar, soda, baking powder, granulated sugar, cinnamon and cloves. Add about half the mixture to the butter and blend together. Beat in the egg and vanilla. Stir in the remaining flour mixture. Add oats, carrots and raisins and blend. Drop by teaspoon 2 inches apart on ungreased cookie sheet. Bake 10 to 12 minutes at 375 degrees until edges are golden. Cool on wire rack. |
