GENOA STYLE GREEN BEANS 
2 lbs. fresh green beans, trimmed
1/4 cup fresh parsley, chopped
6 anchovy fillets, blotted dry and minced
3 garlic cloves, minced
1/4 cup olive oil
2 tbsp. butter
Salt and Pepper, to taste

Blanch the green beans in rapidly boiling, salted water for 2-3 minutes. Remove to an ice water bath to shock, the drain thoroughly.

Heat the olive oil in a large skillet. Melt the butter and add the anchovy, parsley and garlic. Sauté briefly, stirring.

Add the drained green beans and continue to sauté briefly. Season with salt and pepper and serve immediately.
