THREE - FRUIT MARMALADE | |
3 c. prepared fruit, 1 orange, 1 grapefruit, 1 lemon 5 c. (2 1/4 lbs.) sugar 1 1/2 c. water 1/8 tsp. baking soda 1/2 bottle fruit pectin Remove skins in quarters from fruit. Lay quarters flat. Shave off and discard about half of white part. With a sharp knife or scissors, slice remaining rind very thin or chop or grind. Add water and baking soda to rind. Bring mixture to boil and simmer, covered, 20 minutes. Stir occasionally. Section or chop peeled fruit; discard seeds. Add this pulp and juice to the undrained cooked rind. Simmer, covered, for 10 minutes longer. Measure 3 cups fruit mixture into a very large saucepan. Add sugar and mix well. Place over high heat, bring to a full rolling boil and boil hard for 1 minute, stirring constantly. Remove from heat; stir in pectin; skim off foam. Stir and skim for 7 minutes to cool slightly and prevent floating fruit. Ladle into glasses and pressure seal or cover with hot paraffin. Yields: 6 cups. |
