SWEET FINNISH RUSKS 
1/2 c. soft butter
2/3 c. sugar
Grated rind of 1 orange
2 eggs
2 1/2 c. flour
1 1/2 tsp. baking powder

Cream butter, sugar and rind until fluffy, then beat in eggs. Sift 2 cups flour with baking powder and add gradually to butter mixture, beating until smooth.

Sprinkle remaining flour over large board/smooth surface and turn dough onto it. Knead for several minutes, incorporating flour until dough is smooth and easily manageable.

Break off pieces of dough the size of large walnuts and roll into smooth balls. Flatten balls to 3/4 inch thickness. Arrange 1 inch apart on lightly greased baking dish and bake in preheated 400 degree oven for 10 minutes until beginning to turn golden brown and puffy.

Remove and cool until you are able to handle them. While still warm, slice in half with a sharp knife. Arrange cut side up, on baking sheet. Return to oven and reduce heat to 350 degrees. Bake 8-10 minutes until dry and golden but not brown. Makes 24-30 rusks.
