POTATO CAKES 
3 c. shredded potatoes
1 (8 oz.) pkg. Cheddar cheese
1 (10 oz.) chopped broccoli
4 eggs
1/2 c. chopped onion
1/2 tsp. thyme, crushed
1/2 tsp. salt
1/2 tsp. pepper
1/4 c. butter

Mix together cheese, broccoli, eggs, onion and seasoning. Melt butter in skillet; drop 2 tablespoons mixture into skillet and fry until crisp and brown on both sides. Continue frying until gone.
