POTATO CAKES 
5 c. mashed potatoes
2 eggs
15 individual crackers
Enough flour to hold together

Beat well and fry in skillet with a little butter until golden brown. (Cakes should be dropped by spoonfuls in skillet. Fry on both sides.) If you like, you may add chopped onion or ramps, also very delicious.
