CREAM OF POTATO SOUP | |
3 slices of bacon 3 med. potatoes, peeled and cubed 1 stalk celery, chopped 1 sm. onion, chopped (less if preferred) 1 c. water 1/2 tsp. salt Pepper to taste 2 tbsp. flour 2 c. milk Cook bacon in saucepan until crisp; remove from pan and drain on paper towel. Add remaining ingredients to bacon drippings in pan, except flour and milk. Cook, covered, for approximately 15 minutes or until potatoes are tender. Combine flour with a small amount of milk. Add to potato mixture along with remaining milk. Cook over medium heat until mixture boils. Garnish with crumbled bacon bits. |
