CREAM OF POTATO AND ONION SOUP 
2 tbsp. butter
2 tbsp. flour
3 c. milk
1/2 tsp. salt
4 med. onions, chopped
2 tbsp. butter
1 1/2 c. milk
2 c. diced cooked potatoes
Salt and pepper

Melt butter in pan. Blend in flour. Slowly add the milk, stirring constantly. Add the salt. Cook and stir until slightly thickened. Remove from hat. In double boiler, saute onion in butter until golden. Add the milk to the onions and cook for 30 minutes. Then add potatoes, cream sauce and salt and pepper to taste. Heat thoroughly. Serves 5 to 6.
