HEARTY POTATO AND ONION SOUP 
4 med. potatoes, diced
3 med. onions, thinly sliced
8 c. water
1 tbsp. salt
3 tbsp. butter
2 sprigs fresh parsley, chopped

Place the potatoes, onions, water, and salt in a large saucepan. Bring to a boil and then simmer for 45 minutes, partially covered. The vegetables should be tender at the end of that time. Mash the vegetables while in the soup. Just prior to serving, add butter and stir until it is completely melted. Sprinkle chopped parsley over the top and serve.
